Fairway Tavern is bringing people together at the ʻEwa Villages Golf Course, where local flavors, plantation traditions, and island hospitality create a dining experience that feels like home.
Owners Chef Adam Gilbert, Sonia "Sunny" Gilbert, Chris Natale, and Barbara Natale have transformed the golf course restaurant into a welcoming destination where golfers, families, and friends can gather over great food and conversation.
"We wanted to build more than a restaurant. We wanted to create a gathering place," Chef Adam Gilbert said.
The community has embraced that vision. "For years, residents and golfers have been waiting for a place to reopen at ʻEwa Villages Golf Course, and we were excited to bring that space back to life," Chef Adam Gilbert said.
"From the moment we opened, people walked in, introduced themselves, shared stories, and told us how happy they were to have a gathering place again. That confirmed this was something the community wanted and deserved."

The opening restores a full-service restaurant to the golf course, enhancing the experience for golfers while creating a new dining destination for West Oʻahu residents and visitors, said Jordan Abe, City Golf Division Administrator for the City & County of Honolulu's Department of Enterprise Services.
The owners looked to ʻEwa's plantation history for inspiration, researching the area's multicultural heritage to create a menu that honors the traditions of the families who built the community.
"Ewa's history is special," Barbara said. "The plantation communities, made up of many different ethnicities, created a culture of hard work, diversity, and caring for one another. We wanted our menu to celebrate that legacy."
The menu blends Hawaiian, Japanese, Chinese, Korean, Filipino, and other local influences with favorites including fresh poke, poke nachos, lumpia, lechon, sisig platters, and plate lunches. It also features an authentic Philly Special cheesesteak, honoring Chris Natale's hometown, prepared with specialty rolls and ingredients imported from New Jersey and Philadelphia.
"We wanted people to experience a little bit of everything, just like the plantation communities where many cultures came together," Chef Adam said.

The partnership itself grew from decades of friendship. Adam and Sunny Gilbert, former owners of Plantation Tavern in Kapolei and Monarch Poke Shop in ʻAiea, joined forces with longtime family friends Chris and Barbara Natale after raising their families together. Chris brings more than 30 years of bartending and restaurant experience to the venture.
Their mission extends beyond the menu.
"We want people to feel welcome, comfortable, and connected," Barbara said. "Whether they're golfers finishing a round, families gathering for a meal, or neighbors meeting friends, we want Fairway Tavern to feel like a place where everyone belongs."
The open-air lanai overlooks the golf course, creating a relaxed atmosphere that some guests have compared to vacationing on a neighbor island.
Fairway Tavern serves breakfast, lunch, pupu, takeout, and offers private events and catering. In July, Fairway Tavern plans to expand with dinner service from 6 to 9 p.m., along with live music on Thursday, Friday, and Saturday evenings.
